I was browsing the internet searching for new recipes (I'm sick of cooking the same old boring stuff) that I think my family would enjoy. I ran across this blog
The Gracious Pantry . OMGee...she has some awesome recipes, and guess what? They're healthy too! My hubby and I made an agreement that we would start eating a more balanced diet for good health reasons and also to set a good example for our kids. Besides, hubby is about to start training for track season, so it's bye-bye to junk food *gasp*! When people think of healthy eating, they instantly think boring salads and fruit
blah blah blah. Incredibly, I discovered there are a variety of healthy snack options out there that you can make at home in your own kitchen that are absolutely delish!
My favorite food in the whole wide world is Mexican food and I can not wait to make this salsa with whole wheat tortilla chips:

Cilantro Salsa Recipe
(All ingredients are an approximate measure. Adjust to your liking.)
Ingredients
5-6 small-medium tomatoes
4 small garlic cloves (or two large ones)
Peppers (choose the type & amount based on how spicy you like your salsa)
Cilantro (about 1/2 cup chopped, but again, use to your liking)
Red onion (1 large or two small)
*I added fresh lime juice*
Directions:
Step 1 – Chop all your ingredients. Be sure you chop them well. The finer you chop everything, the better texture your salsa will have.
Step 2 – Mix in a bowl and serve!
